“The lemon zest, fresh herbs and onions hits your mouth first and then it finishes with the sweetness of the pesto,” Mrs Waterman said. “Use a good quality pesto. I recommend the pesto from the Bremer Cafe at Uraidla.
“Of course enjoy with a good Adelaide Hills chardonnay.”
Black Box Pizza
Ingredients
Pizza dough
Good quality tomato sauce
70g mozzarella
80g crumbled feta
80g marinated char grilled eggplant
Basil pesto
Method
Spread a thin layer of basil pesto on your base and then spread a layer of tomato sauce.
Sprinkle shredded mozzarella and over the base and then crumble the feta across the top.
Add strips of eggplant and cook in a hot oven for 15 to 20 minutes.
Check that the base is crisp.
Garnish with finely chopped spring onions, the zest of a lemon and chopped fresh oregano.
